Raspberry Biscuits


Apart from the famous IKEA meatballs, I can’t resist the Hallon biscuits especially the one with the raspberry jam. That 176gm pack of biscuits cost somewhere RM 5.30 and I think it is time for me to bake this from scratch. After many sessions with youtube tutorial, I found the easiest way to bake this. And yes, sharing is caring and that’s why I’m sharing the recipe with all of you. Enjoy the cookies as much as I do!


Biscuits with raspberry filling


Ingredients


225 gm plain flour - sifted

60 gm potato flour - sifted

100 gm castor sugar

1 teaspoon baking powder

pinch of salt

1 vanilla pod

200 gm cold salted butter - cut into small pieces

1 egg beaten

100 - 150 ml raspberry jam


Instructions

1. Mix flour with potato flour, sugar, baking powder and salt in a bowl.

2. Split the vanilla pod lengthways and scrape out the seeds into the bowl.

3. Add butter and half the egg.

4. Rub with your fingertips until the dough forms a ball.

5. Refrigerate for 1 hour.

6. Pre heat the oven to 200 Celcious.


To assemble the cookies :


Place the dough on top of parchment paper and roll them to an even half inch thickness.

Cut out a total of 40 circles shape (using the round cookie cutter diameter 5cm), and keep transferring the cutouts to the baking sheets as you work. With 40 circles, it will yields 20 cookies as you need to sandwich them together.

Arrange the 20 circles shape (this will be the top cookies) and using the second cookie cutter with the heart shape (this time, use the 4cm heart shape cookie cutter), cut out the center of the circles shape cookies. You will sandwiching the two cookies together and there will be a “small window” for the top cookies so you can see the jam filling underneath.
