Spaghetti And Spanish Meatballs

Makes 4 servings
Ingredients:
1 pound ground pork
3 cloves garlic, pressed
1 teaspoon coriander or 1 tablespoon diced cilantro
1/4 to 1/2 teaspoon diced hot red pepper (optional)
Sea salt and black pepper to taste
3 cups cooked brown rice pasta
Methods: -
1) Preheat the oven to 350F.
2) Combine all of the ingredients, except the pasta, in a mixing bowl. Shape into 2 to 3 inch round meatballs. Spray a baking dish with non stick spray and bake for 20 minutes, or until cooked through and no longer pink inside. Serve with the pasta.
