Oatmeal Power Cookies

Good source for lactating moms of fiber and iron and suitable for 0-3 months old babies.
Makes approximately: - 30 cookies
Ingredients: -
1 cup old-fashioned oats
1 cup whole-wheat flour
1/2 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/4 teaspoon table salt
4 ripe bananas, mashed
1/4 cup unsalted butter, melted
1/2 cup peanut butter (may substitute sunflower butter)
1/2 cup raisins
1 teaspoon vanilla extract
1/2 cup semi-sweet chocolate chips
Prep time: 15 minutes
Cook time: 20 minutes
Methods: -
1) Preheat the oven to 350F.
2) In a large bowl, mix together the oats, flour, cinnamon, baking powder and salt. Mix the bananas, butter, peanut butter, raisins, and vanilla in a medium bowl. Pour the banana mixture into the flour mixture and mix until just combined, then mix in the chocolate chips. Let the mixture rest for 10 minutes.
3) Using a tablespoon, scoop the batter onto a parchment-lined baking sheet, leaving 1 inch between cookies. Bake for 20 minutes. Cool and serve or refrigerate for up to 2 days or freeze for up to 1 month.
