Brown Rice Bibimbap

Serves 2

Ingredients:

2 small bowl cooked brown rice (g)

2 fried eggs

Chili sauce:

1 tablespoon chilli paste

1 clove garlic, crushed

½ tablespoon white vinegar

½ teaspoon sesame oil

1 teaspoon toasted sesame seeds

½ teaspoon brown sugar

½ tablespoon soy sauce

Beef (can be replaced by skinless chicken or other lean meat):

1 teaspoon sesame oil

240g lean minced beef

1 clove garlic, crushed

1 teaspoon toasted sesame seeds

5g spring onion, sliced

Vegetables:

½ cup sliced carrot (60g)

10g sliced mushrooms

½ cup blanched spinach, chopped

½ cup thinly sliced cucumber (60g)

1 teaspoon sesame oil

Method:

  1. Mix together all chilli sauce ingredients and keep refrigerated in an airtight container.

  2. To prepare the beef, heat oil in a large frying pan. Sauté the garlic until fragrant, add minced beef and cook until browned and dry. Remove from heat and add sesame seeds and spring onion. Keep refrigerated until ready to use.

  3. For vegetables, sauté the carrot, mushroom and spinach separately with a little of the sesame oil until cooked. Add sesame seeds and keep refrigerated in separate containers until ready to serve

  4. Keep the sliced cucumber raw and refrigerated.

  5. To serve, remove ingredients from refrigerator and bring back to room temperature. Place the cooked brown rice in bottom of a wide bowl.

  6. Place the prepared beef and vegetables around the rice. Top with egg.

  7. Drizzle the sauce over the top and serve.
